The Herdade do Lousial White Callum Reserva is produced in the Cova da Beira sub-region, within the D.O.C. Beira Interior region, from the Callum grape variety, a historic treasure of the Castelo Branco district. In an effort to preserve this ancient grape, a field with 92 clones was planted at Herdade do Lousial, where the vines are cultivated using the best viticultural techniques. The wine has a citrine yellow colour and a bright appearance. Its aroma is delicate, fresh, and complex. On the palate, it impresses with remarkable acidity, powerful structure, creamy texture, and a delicate retronasal aroma, leading to a long and appealing finish. The winemaking process includes manual harvest, crushing and total destemming, followed by gravity-based clarification and controlled fermentation. Aged in stainless steel, this wine is best served at 8-10°C and pairs beautifully with strong fish dishes, baked cod, and lagareiro-style octopus.
