The Quinta dos Termos White Reserva is produced in the D.O.C. Beira Interior region, sub-region Cova da Beira, from traditional grape varieties such as Fonte Cal, Síria, Arinto, and Verdelho. The grapes are grown in granitic soils of low fertility, providing a slow and balanced ripening process, which allows for the production of fresh, flavorful, and elegant wines. After manual harvesting in 15 kg boxes, the grapes undergo crushing and total destemming with protection against premature oxidation. Clarification is done using gravity for 18 hours, and fermentation occurs between 20°C and 22°C, followed by aging in stainless steel. This wine features a citrine colour with greenish highlights and an attractive aroma with mineral and fresh fruit notes. On the palate, the aromas are confirmed with intensity and balanced acidity.Best served between 8-10°C, it pairs wonderfully with strong fish dishes, bacalhau, and polvo à lagareiro.
