The Quinta dos Termos White Riesling Reserva is produced in the D.O.C. Beira Interior region, sub-region Cova da Beira, from the Riesling grape variety, one of the great German varieties with great potential in the region. This variety produces dry white wines with marked acidity, mineral aromas, and excellent aging potential. During bottle aging, it develops the characteristic kerosene aroma of Riesling. The grapes are manually harvested in 15 kg boxes, undergoing crushing and total destemming with protection against premature oxidation. The clarification process is done by gravity over 18 hours, and fermentation is controlled between 20°C and 22°C, followed by aging in stainless steel. This wine has a citrine colour with greenish highlights and a delicate aroma with the unmistakable characteristics of Riesling. On the palate, it surprises with remarkable acidity, a striking structure, creamy texture, and a delicate retronasal aroma, providing a long and attractive finish.Best served between 8-10°C, it pairs wonderfully with strong fish dishes, bacalhau, and polvo à lagareiro.
