The Quinta dos Termos Red "O Pecado" is a unique wine from D.O.C. Beira Interior, born from a bold decision by Quinta dos Termos to plant the Sangiovese grape, one of Europe’s great varieties. This choice was considered a "sin" at the time, but has proven to be a great success, as the variety thrives in the Cova da Beira region. This production is reserved only for special years when the climatic conditions are perfect for the variety.
The winemaking process is carried out with great care. The grapes are hand-harvested in 15 kg crates, followed by total de-stemming and gentle crushing. Prolonged maceration takes place, and the wine is aged in new and used French oak barrels, allowing it to gain complexity and balance. Natural clarification is performed, aided by the cold of the Serra da Estrela.
The Quinta dos Termos Red "O Pecado" has an open ruby colour and offers a fresh and vibrant aroma with notes of red fruits, plum, fig, and subtle spices. On the palate, the wine impresses with its excellent acidity, enhancing the liveliness of the fruit, and with its firm yet soft tannins, promising good ageing potential. This wine is perfect to pair with roasted meats, grilled meats, oven-roasted sausages, or pasta with tomato sauce.
