The Quinta dos Termos Red Reserva do Patrão is a distinguished wine from the D.O.C. Beira Interior, made from Syrah grapes grown in the Vilela plot. This variety is known for its deep colour and vibrant aromatic profile, which manifests in the wine with aromas of red fruits, currants, and spices. The winemaking process involves manual harvesting, total de-stemming, and gentle crushing, followed by a prolonged maceration to extract colour and aromas. The wine undergoes ageing in new and used French oak barrels, which adds complexity, while natural clarification, aided by the cold of the Serra da Estrela, ensures the purity of the flavours. On the palate, it shows good volume, velvety tannins, and a refreshing acidity characteristic of wines from the region. This wine pairs perfectly with hearty dishes such as goat, sausages, beef stews or roasts, pork cheek stews, game dishes, or Serra cheese. With excellent aging potential, the Quinta dos Termos Red Reserva do Patrão will continue to evolve over the years, revealing new layers of flavour and complexity.
