The Quinta dos Termos Red Vinha das Colmeias Reserva is a wine from D.O.C. Beira Interior, made solely from the Alfrocheiro grape variety. The grapes come from the Vinha das Colmeias plot, where the vines grow in an environment of immaculate purity, and bees work diligently to produce honey from Alfrocheiro flowers, creating a unique atmosphere of biodiversity and freshness.
The winemaking process is carefully controlled, with manual harvesting in 15 kg crates, followed by total de-stemming and gentle crushing. After fermentation, the wine is aged in new and used French oak barrels, allowing it to gain significant complexity. The barrel aging is followed by natural clarification, aided by the cold of the Serra da Estrela.
This wine presents an intense ruby colour and reveals aromas of red fruits and wild plants on the nose, with complexity that develops further over time. On the palate, it offers good volume, velvety tannins, and a pleasant freshness, typical of the natural acidity found in wines from the Cova da Beira. The aromatic profile is striking and well-integrated with the oak notes, resulting in a harmonious and sophisticated experience.
It pairs perfectly with richer dishes such as roasted goat, sausages, beef stews, pork cheeks, game, and cured cheeses like Serra cheese. Ideal for those seeking a rich and flavorful gastronomic experience.
